Ingredients
Boneless chicken 1 kgCapsicum 3
Crushed green onion 2
Tomato paste 1 cup
Vinegar ½ cup
Tomato ketchup ½ cup
Oil ½ cup
Red chili 10-12
Crushed garlic 1 tbsp
Crushed white pepper ½ tbsp
Salt as per need
Baby corn as per need
Mint leaves as per need

Method
- Marinate boneless chicken with garlic, vinegar, white pepper and salt for half an hour.
- Now heat oil in a fry pan and cook chicken.
- When chicken dry add tomato paste, tomato ketchup, red chili and cook for 15-20 minutes.
- Then cut capsicum in cubes and green onion and put into the fry pan.
- Cook for 5-10 minutes.
- Mexican chicken is ready.
- Dish out in a platter and garnish with baby corn and mint leaves.
- Serve hot with rice or naan.
